Sweet and Tangy Salmon with Green Beans – Serves Four

  • 4 – 6 oz. Salmon filets
  • 1 tbsp. Butter
  • 2 tbsp. Brown sugar
  • 2 tbsp. Reduced-sodium soy sauce*
  • 2 tbsp. Dijon mustard
  • 1 tbsp. Olive oil
  • ½ tsp. Pepper
  • ⅛ tsp. Salt
  • 1 lb. trimmed fresh green beans

*Coconut aminos make for a delicious healthy substitute for soy sauce.

To make this dish, preheat your oven to 425 degrees and place your salmon filets in a large baking pan coated with cooking spray. Melt butter in a small skillet, and stir in your brown sugar, soy sauce (or coconut aminos), dijon mustard, olive oil, pepper, and salt. Brush half of this mixture over your salmon.

Place your green bean legumes in a large bowl and toss them with the remainder of your brown sugar mixture. Roast until the fish begins to flake easily and the green beans are crisp and tender. This typically takes around 14 to 16 minutes. Once it’s done, serve and enjoy!
